Chocolate Chip Cookies With Baking Powder Instead Of Soda. A simple chocolate chip cookie recipe without baking soda or baking powder. The original nestlés toll house cookies (chocolate chip cookies) recipe calls for baking soda, not baking powder.

This produced results that were more cakey and puffed while baking. Used 2 1/4 flour as recipe stated instead of two 1/4 (aka half a cup. 4 tbsp regular sugar, unrefined if desired. Instead, opt for a sift in the flour and baking soda, then fold the mixture with a spatula (be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
